Eel in brewer's sauce:

Sliced eels from Matsu and fried. Eel in brewer’s sauce is one of the famous dishes in Fuzuou. Good and unique taste of the dish. It is served as home dishes or served in formal banquet. People in Matsu serve this dish to deities during the Chinese new year or other holidays. Local restaurants serve this dish as well.

Croaker in brewer’s sauce:

Using the distilled grain as seasoning in a dish is the feature of Fuzuou dishes. When using the distiller grain as seasoning fish, the croaker is the best choice. Croakers used to be the biggest quantity of fish supply in Matsu area, in recent year the croakers are supplied from mainland China. Croakers are full of protein, calcium, phosphorus and iron, the flesh is tender, with the brewer’s sauce, the flesh become delicate.

Meat in brewer’s sauce:

The distiller grain is the residual product when producing old wine, people in Matsu use it as cooking seasoning a lot, for example, dishes like eels in brewer’s sauce, meat or chicken in brewer’s sauce, also croakers in brewer’s sauce. In recent years, influenced by Taiwanese dishes, when the meat in brewer’s sauce is served, it served with lemon slices, customers can have some drips on meat to add freshness.

Fried rice in brewer's sauce:

Since the distilled grain is proved as healthy food which can decrease cholesterol and blood fat, the traditional dishes in Matsu such as meat in brewer’s sauce, croakers in brewer’s sauce or eels in brewer’s sauce are popular. Now the local restaurants represent new dishes---fried rice in brewer’s sauce, its vivid color and pleasing taste, is popular by tourists.
