Matsu good wine: Aged Matsu Kaolaing Liquor, white spirit, old wine.

The Kinmen Kaoliang Liquor and the Matsu old wine have always been the famous wines from the battle fields, but it is rarely known that Matsu actually also produces the sorghum wine which is even mellower. The manager of Matsu Liquor Factory Industry Co, LTD Liu Runna explained that, Matsu liquor used to be sold to the government monopoly bureau like the Kinmen Kaoliang Liquor, but since the quantity was not much, the government monopoly bureau did not sell it alone but used it as the base liquor for the medicated wine. In recent year, the Matsu Liquor Factory Industry Co, LTD thought it was a pity to serve such good liquor as the base liquor, so the brewery decided to sell the liquor alone with homemade brand. The Matsu Kaoliang Liquor is often compared with the Kinmen Kaoliang Liquor. Liu indicated that, although the Matsu sorghum and Kinmen sorghum are made by the same procedure, both of them have delicate fragrance, but the ferments used are different and the Matsu sorghum is flaunted for more years, many people feel that it is smoothly for drinking and it can be drink once if it serves in small wine class.

The Matsu Kaoliang Liquor must pass through "two steams two ferments", namely each two distillation and the fermentation, then store it at "88 Tunnel". All of the old sorghum wine must be stored for more than 5 years before being sold. “Because the large quantity of sale for Kinmen Kaoliang Liquor, so the Kinmen Kaoliang Liquor cannot be stored up that long time. But Matsu Kaoliang Liquor actually is served to make the liquor with time, it is worth waiting for". Liu Runna said that, although the time for sorghum wine is not as important as grape wine, but the older tastes better. The Matsu original inhabitant air-raid shelter "88 Tunnnel" is being cut from the foot of a granite hill, so it is warm in winter and cool in summer. The temperature is stable that it suits the long time to store good wine. The taste and the smell would slowly purify when time pass by.

Drinkers used to like to pursue the high strength of alcohol for hot feeling; therefore Ta chu Liquor called "white liquor" is also quite popular. In recent years, drinking actually is fastidious for the feeling in the mouth, the number of people who drinks big yeast liquor decreases, Matsu Liquor Factory Industry Co, LTD sedulously reduced the strength of alcohol of sorghum wine.

Ta chu Liquor strength of alcohol is above 60%, the Kinmen Kaoliang Liquor also has 57% density, but our Old sorghum wine is sedulously controlled at 47%. Another kind of pale Li sorghum liquor even only has 42% strength of alcohol; it is the favorite wine in the market." Liu Runna said that, at present the Matsu Liquor Factory Industry Co, LTD has 2 million bottles of sales volumes. Because there is no brewery at Fuzhou, many guests from mainland China do not even consider the price differences that they apply any way to get Matsu Kaoliang Liquor.

As for the famous Matsu old wine, in recent years, is suspended for production because the Matsu Liquor Factory Industry Co, LTD is promoting the sorghum liquor. Luckily the merchants still have many in stock. The old wine is one kind of the yellow wine, soaked in glutinous rice, steams, falls, and adding the red yeast ferments, for 30 days, the old wine may be produced. The"Flavoring from distiller's grains" smells good, which is the main seasoning in Fuzhou dishes. In the past people makes old wine in Matsu, the fisherman uses to warm up the body before going to fish. Local woman also uses the old wine to sit the time of childbirth. It will extend the muscle to invigorate the blood and it works better than rice wine.
